Breed Selection
We use an Angus/Hereford blend for our beef, as these English breeds are known for their exceptional flavor and tenderness. We ensure our cattle have no Brahman or Dairy influence, guaranteeing a consistent and superior product.
Quality Grading
Our beef is graded by USDA inspectors.
- Choice Grade Focus: While Prime is the highest grade with the most marbling, only 2-3% of all animals achieve it. We specifically select beef from the top two-thirds of the Choice grade.
- Choice Grade Breakdown: The Choice grade has three sub-sections: Moderate, Modest, and Small marbling. By choosing only the top two-thirds, we are selecting beef with marbling closer to the "Moderate" end of the Choice spectrum, which is the closest to Prime.
- Marbling and Quality: Marbling (the intramuscular fat) is what contributes to tenderness and juiciness of the beef. Since we focus on the higher end of the Choice grade, our beef will have a higher degree of marbling than standard Choice, making it closer in quality to Prime than the lower end of Choice.
In essence, by carefully selecting from the best portion of the Choice grade, We are providing beef that approaches the quality and marbling of Prime, even though it's officially graded as Choice.
Humane Handling
Humane Handling: We prioritize humane animal handling. This means keeping pens at no more than 75% capacity and handling cattle gently. This reduces stress and adrenaline in the animals, resulting in more tender and flavorful beef. Our beef are only fed non-GMO corn and natural grass. We source our beef from a single distributor and packer who adhere to these standards.
